Colour: Extra Virgin Olive Oil
Nose: Given the age of this old Islay, the initial nose is surprisingly fresh and bright with crisp citrus notes of lemon lime and fresh foliage. The aromas then shift into fatty oily notes of buttered scallops and a camphoric mild menthol smoke like an elegant cocktail or old wooden fishing boat.
Palate: Mineralic like steak tartare and bursting with citrus, salt and herbal coriander notes like a Salsa Verde. The body is thick, mouth coating and oily with gentle spices of caraway and smoked green chillies.
Finish: A very mild, elegant old smoke lingers like glowing embers in a grand stone fireplace.
